The ST Lucido Bakery began when the owner, initially aiming to start a flour business, shifted to selling commercial bread instead at a bakery, opening three branches in total. When the pandemic severely impacted the business, leading to significant losses (mounting from five hundred thousand to a million pesos), they shifted their focus to selling cheesy ensaymada. This ensaymada, which is made from flour, sugar, yeast, buttercream, and topped with excessive grated cheese, quickly gained popularity, alongside other added variants such as salted egg, bacon, and ube-flavored ensaymadas. This success then also opened new opportunities for resellers, with some earning up to Php 5,000-Php 8,000 per day.
